Whether they’re big and barrel aged or wild and funky, each beer is a unique batch, hand crafted to showcase distinctive ingredients, innovative brewing processes and diverse beer styles from around the world. The series launches with three inaugural releases: Ripasso Rosso, Ripasso Bianco, and Balthazar Imperial Stout, all hand bottled in to 375ml champagne bottles by the Wayward team.
Meet the Beers
Ripasso Rosso & Ripasso Bianco

Ripasso is a winemaking technique where wine is re-fermented on grape skins to give it added depth and intensity. For our Ripasso, we’ve applied this concept to beer instead; fermenting a classic farmhouse ale on skins from our friends at Tyrrell's Wines. Primary ferment was followed by four months maturation in 2000L French Oak Foudres alongside a Brett-dominant wild yeast blend. Layers of delicately balanced malt, citrus and spice intertwine with gentle acidity and fruit character from grapes; all of which is underpinned by savoury French oak and funk from the Brett, blurring the boundary between wild fermented wine and beer.
Ripasso Rosso 2019 was brewed using post-ferment Four Acres Shiraz marc, from vines planted in 1879.
Ripasso Bianco 2019 was brewed using Belford Single Vineyard Chardonnay marc, from vines planted in 1991.
Balthazar

This bold Imperial Stout offers up intensely layered aromatics of caramel, coffee, chocolate and burnt toffee, intertwined perfectly with subtle whiskey and vanilla notes courtesy of six months maturation in ex-Jack Daniels barrels. On the palate expect a rich, complex and mouth filling beer with flavours of coffee and cacao carrying all the way through to a well rounded finish.
Named in honour of Balthazar; the coolest rabbit there ever was.
