  • 30g butter, melted

  • 1 egg yolk lightly beaten Course sea salt (kosher salt)

Method

  • Leave in a warm place for yeast to activate

  • Put flour and salt in a large bowl and make a well in the centre

  • Add the yeast mixture and the butter and mix into a rough dough

  • Turn out onto a floured surface and knead for 10 minutes until a soft and elastic

  • Place into an oiled bowl, oil the surface of the dough and cover with cling wrap or a clean tea towel and set aside in a warm place for an hour, or until roughly doubled in size

  • Preheat oven to 190 ̇c. Line a large baking tray with baking paper

  • Punch down the dough and knead again for 2-3 Minutes

  • Divide dough into two even balls

  • Roll each piece into a rope roughly 40 cm long

  • Circle and knot into a pretzel shape and place on tray

  • Cover with a tea towel and place in a warm, draught free place for 20-30 mins (if you don’t have a warm, draught free area, place in oven on 30 ̇c covered with tea towel)

  • After dough has risen again brush pretzels with beaten egg yolk and sprinkle with salt

  • Place in oven for 15 mins or until golden brown

Serve with melted butter and wash it down with another Wayward Pilsner.
