This mild salsa is laced with our IPA to give it an extra special kick! Our mates at Smoking Coals Barbecue whipped this recipe up for you to enjoy at home, give it a go folks!
Ingredients
1 can Wayward India Pale Ale
4 Large Truss Tomatoes
1 Large Red Onion
1 Garlic Clove
1 whole Jalapeño (seeded)
2 Tbsp olive oil
1/2 bunch Broad Leaf Parsley (chopped)
Salt and Pepper to taste
Method
Slice tomato and onion into quarters and garlic clove in half. Season with salt and pepper.
Place on bbq and grill until soft.
Remove and place in blender. Blend until smooth.
Preheat olive oil in saucepan over a medium heat.
Add mixture from blender to saucepan, leave for 2mins.
Stir in 1 full can of Wayward India Pale Ale and bring to boil.
Reduce heat and simmer until desired consistency is achieved (We like it thick)
Remove from heat and transfer into a bowl. Stir in parsley and place in fridge to cool.
